Paneer Tawa Masala by Divya Gugnani

Makes 4 servings

INGREDIENTS:

1 lb. cottage cheese (paneer), cubed flash fried in canola oil
1 teaspoon ginger, julienned
1/2 teaspoon black cumin
5 teaspoon fresh ginger paste
1/2 teaspoon brown cumin (shah jeera) seeds
2 green chillies, chopped
Carom (ajwain) seeds to taste
3 tablespoons canola oil
1 large green pepper/ capsicum, diced
2 teaspoons coriander powder
2/4 Cup onions, chopped
1 Tablespoon coriander leaves, chopped
red chilli powder to taste
1 teaspoon cumin (jeera) seeds
salt to taste
garam masala to taste
3/4 Cup Tomatoes, chopped
5 teaspoons garlic paste
1 teaspoon white pepper powder

PREPARATION:

1. Set aside flash fried cottage cheese cubes.

2. In a large fry pan add cumin and chopped onions and brown.
Add ginger and garlic pastes, green chillies coriander powder, red chilli powder, white pepper powder, salt and carom seeds. Fry on medium heat.

3. Add chopped tomatoes. Fry till the oil surfaces.

4. Mix in the cottage cheese, capsicum, garam masala, black cumin and cook for 5 minutes.

Tips:
Garnish with chopped coriander and long think slices of fried ginger.

Serve hot with any Indian bread.

Preparation: 10 minutes
Cooking: 15 minutes
